Gingerbread


I loooove having gingerbread out during the Christmas season. Something about a well-decorated plate of gingerbread sitting in the kitchen amplifies my Christmas spirit. The only problem is that I'm not too good at baking. I always end up ruining them somehow. But this recipe that I found is unbelievably simple and I didn't ruin either batch! (So also fool-proof) I got the recipe from "Gimme Some Oven" blog. The cookies held their shape well, tasted delicious, and the frosting/icing recipe to decorate with is seriously worth an extra two seconds.  

I purchased this Betty Crocker pre-made icing attempting to save a few minutes and not have to make my own. For the most part, it did its job but ultimately was just too messy. It was super hard to squeeze from the bag and tended to run/not make the cleanest designs on the cookies. For the second batch of cookies I made the icing that Ali from Gimme Some Oven recommended and it was so much better! It took me just a minute or so to whip up the icing and it went on smoothly and made decorating much easier- so just make the icing yourself. 


Lastly, silly baby update. Every appointment they check the baby's heart rate and the past few appointments it has taken them a really long time to read it and my doctor told me that Theo just happens to be the wiggliest baby she cares for, and she cares for a whole lot of babies. And HE IS SO WIGGLY. Theo is always making his presence known haha. So apparently Theo has lots of energy and is having a great time in there 😂
