Brunch at the Taylor's- Lemon Blueberry Ricotta Pancakes


Hi all, happy Sunday! This week Matthew and I made Lemon Blueberry Ricotta Pancakes, courtesy of Jo Cooks. The title made me a little nervous, and I'm terrible at making pancakes (of all things...I know) so I'm not really sure what convinced me to try these. But we did! And they turned out amazing! I did change up a few things in the recipe, so I decided to make this blog post out of my little experiment. Read the few things I changed before trying the recipe!

*Disclaimer: I didn't cook the pancakes. I've never had a good experience cooking pancakes, so I asked Matthew to do it. As you can see he did a very good job 😊

The first thing I changed is the amount milk called for in the recipe. It calls for one cup of milk, but I added 1/2 of a cup and included 1/2 of a cup of greek yogurt in the other half's place. It tasted amazing! However, it made the batter thicker than it was supposed to be, so I added another splash of milk and an egg white, and the batter was perfect again.

The second thing isn't necessarily something I changed. I have never been able to make a good blueberry pancake, not just because I'm bad at cooking pancakes, but mostly because the blueberries always pop or something and make the pancakes all gooey and icky. I wanted to get these pancakes right the first time and I knew I'd have to come up with a solution.

If you like huge exploding blueberries, just ignore this part. 



To fix the problem, I sliced the blueberries in half, dried them off as good as possible (not sure if this step was necessary), and rolled them in flour before folding them into the pancake batter. They spread through the batter evenly, didn't all fall to one side, and didn't make the pancakes all mushy. From now on that's exactly what I'll be doing for perfect blueberry pancakes!

Lastly, I used about half the zest of a lemon instead of the zest from the whole lemon. I honestly think the zest from the whole lemon would have been pretty overpowering, especially since you also add a good amount of lemon juice to the mixture. One of the first things Matthew said when he tried the pancakes was that you could really taste the lemon, so I think you're safe to limit the lemon zest you add.
