Spicy Chicken and Chickpea Soup



I accidentally made this soup a few weeks ago when I planned on using a recipe for some other soup but realized I didn't have any of the correct ingredients apart from the chicken! 🙃 This soup ended up being pretty dang spicy but also super delicious! Serving it with fresh cilantro and avocado on top helps cut the spice. However, the spice is what really makes the soup, so I don't recommend cutting out any of the spicy ingredients.

Ingredients:

Chicken Rub
  • 2 chicken breasts
  • a few tbsp olive oil (2 or 3)
  • 2 tbsp red pepper flakes
  • 1/4 tsp cayenne pepper approximately
  • a few sprinkles salt and pepper
  • 1 tsp basil
In Crockpot
  • 2 stalks of celery (chopped)
  • 1/2 diced yellow onion
  • 2 tsp minced garlic
  • 3 tsp ground cumin
  • 1 tsp oregano
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups chicken broth
  • 1/3 cup almond milk
  • 1 15oz can chickpeas
To Garnish
  • fresh cilantro
  • one avocado
I am using a small crockpot (1.5 quarts), adjust ingredients according to your crockpot size. With the listed ingredients/crockpot size, this contains approximately five servings.



Rub 2 chicken breasts with olive oil, 2 tbsp red pepper flakes, 1/4 tsp cayenne pepper, salt and pepper, and 1 tsp basil. Place rubbed chicken in the bottom of the crockpot. Chop half a yellow onion (I'm actually using two small farmers market onions and I'd definitely-and obviously- recommend using as many local farm ingredients when you cook as possible!) and chop two stalks of celery and throw those in the crockpot.

Also put in the crockpot: 2 tsp minced garlic, 3 tsp ground cumin, 1 tsp oregano, at least 1/2 tsp cayenne pepper, 1/2 tsp salt, 1/4 tsp pepper, and 2 cups chicken broth. 

Cook on high for 3-5 hours or until chicken is completely cooked through. Take chicken out and shred with a fork, then return to the crockpot. Add 1/3 cup almond milk and one can of chickpeas to the pot and cook again for 30 minutes. Serve with fresh cilantro and sliced avocado.
