Pumpkin Scones with Caramel Drizzle

I'm SO ready to dive into fall, so I was excited to whip something up with pumpkin in it. I live for everything pumpkin flavored during the fall. These ended up tasting amazing!! I credit the actual pumpkin puree that goes in the scone batter AND the glaze 😍 I hope you love these as much as we did!


Ingredients for scones:
2 cups flour
3 tbsp white sugar
2 tbsp brown sugar
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
8 tbsp very cold butter
1/3 cup pumpkin
3 tbsp sour cream
1 egg

Preheat oven to 400 degrees.

Mix together flour, both sugars, baking powder, baking soda, and salt. Either chop the butter up very small, or grate the butter into the mixture. Mix the butter in with your hands. The mixture should resemble damp sand.

In a separate bowl, mix together pumpkin, sour cream, and the egg. 

Mix the pumpkin mixture and the dry mixture with a fork. Do your best to roll the clumpy mixture into a ball and lay on a lightly floured surface. Pat the ball until you create a circle approximately 3/4 inch thick all the way across. 



Use a thin, sharp knife to cut into approximately 8 triangles. Place on cookie sheet around an inch apart from each other. 



Bake for 13-15 minutes.

Let cool completely before glazing. 

Ingredients for glaze:
1 cup powdered sugar
1 tbsp light corn syrup 
2 tbsp water
1 tbsp pumpkin puree
1/2 tsp pumpkin pie spice

Mix all ingredients in a medium bowl with a fork until smooth. Put the scones on a drying rack and pour the glaze over the scones. Let the glaze set before adding the caramel drizzle (I set mine in the refrigerator until they were set to speed up the process).

Ingredients for caramel drizzle:
1/4 cup butter
1/2 cup brown sugar
1/4 tsp salt
1/3 cup heavy cream
1 cup powdered sugar

Chop the butter up into a few pieces and put into a skillet over medium heat with the brown sugar, salt, and heavy cream. Wait until butter and sugar are melted, then stir occasionally until there is a rolling boil. When the mixture reaches a rolling boil, stir constantly for 2 minutes. After two minutes, remove from heat and let the caramel cool for around five minutes. When the caramel is cool, mix the powdered sugar in until completely smooth. 

Pour into a piping bag with a very small tip opening, or pour into a ziplock bag with the very end snipped off, and drizzle over the scones.
