Cranberry, Sweet Potato, and Feta Side Dish


I was very pleasantly surprised to find out that many of you who read this blog have actually tried and loved the recipes! It's so encouraging to hear that and I'm excited to hopefully keep providing delicious ideas! I knew I wanted to provide a Thanksgiving recipe because Thanksgiving is basically the most important meal of the year and I know a lot of you guys have not only actual Thanksgiving, but also FRIENDSgiving to make food for! So if you're in charge of a side dish for one of those meals, fret no more. 

This recipe is soooo simple I feel like a fraud for even calling it a recipe! It's just like a few baking steps and throwing the ingredients together, honestly. 

Ingredients:
5 average sized sweet potatoes
Olive oil (around 8 tablespoons)
1 C. dried cranberries
4-5 Tbsp brown sugar
1 package (around 0.4 oz) feta cheese

1. Set your oven to 375 degrees. Clean around five average sized sweet potatoes, rub them with olive oil, and bake them for 30 minutes. This is just to get them softer than when they're not baked so you can cut them more easily. This step is 100% necessary for me 😂 if it isn't necessary for you, skip this step and go straight to the chopping!

2. Cut up the sweet potatoes into almost bite size pieces. This is also the step that I took the skin off. 

3. Spread the chopped sweet potatoes and one cup of dried cranberries on a cookie sheet. Drizzle the pan with olive oil, honey, and sprinkle around 3 tablespoons of brown sugar (or more, live a little). Bake this in already preheated oven (to 375) for 25 minutes or until the sweet potatoes are completely cooked through. 


4. Let the cooked sweet potatoes cool completely. When they're room temp. transfer them into your serving dish. 


5. Lastly, sprinkle as much feta on top as you'd like (I used all but a few tbsp from the package) and a tablespoon or two of brown sugar as well. Also serve at room temperature so the feta doesn't try melting...yuck. I had this in the refrigerator for the next two days and it was just as good as the day it was made!
