Sickie Detox Soup


Hi friends! I've been feeling pretty under the weather for a few days now, and I always pay close attention to my eating and sleeping habits when I'm sick so I can try to straighten things out a bit. Usually when I'm sick it only lasts a day or two....but we're here ONE WEEK LATER and I'm not feeling any better at all. Time to make some serious changes, it seems. 

I'm really focusing right now on what I'm putting into my body, because that's all it has to work with for energy and rebuilding. Eating pizza for lunch most likely would not have given my body the proper nutrition it would need to be able to attack this virus, so I whipped up this detox soup. Eating simple, healthy ingredients gives your body a break from things that can be difficult to digest or things that use more of your bodies energy than should be necessary to process your food. Try this soup out when you feel ill or just want an easy healthy meal!

The ingredients:

1 can of chicken broth (14.5 ounces)
4 petite red potatoes
3 large carrots
2 handfuls of spinach
1 jalapeño
1/2 cup of almond milk
cayenne pepper
cilantro
salt and pepper


The process:

Pour the can of chicken broth into a medium sized pot over medium heat. Chop the potatoes and carrots and add to the cooking chicken broth. I usually chop the potatoes relatively small so the cooking time is minimal. After I toss the potatoes and carrots into the pot I sprinkle salt and pepper in, which is obviously optional. Let the potatoes and carrots cook completely through before moving on to the next step, approximately 10 minutes cooking on medium-high heat.

When the potatoes and carrots are cooked through, add a few handfuls of spinach (2 handfuls usually does it for me) and a chopped jalapeño to the soup. Cook for just a minute, enough time for the spinach to wilt. Then add 1/2 cup of almond milk to the soup and a few sprinkles of cayenne pepper. 

Garnish with cilantro and enjoy!
