Lemon Poppy Seed Banana Muffins


I feel like it has been way too long since I've posted a recipe, and I make banana breads and muffins ALL the time, so I'm really holding back on you guys! I always switch up my recipes and vary the amount of ingredients just to see what the differences are, and this time the result was phenomenal! It's a little bit of an odd recipe, but trust the process 😉


Ingredients
3/4 cup coconut flour
3/4 cup regular white flour
1/2 cup coconut sugar
1/2 cup granulated white sugar
1 tsp baking soda
2 mashed over ripe bananas
juice of 1 1/2 lemons
1 egg
1/3 cup vegetable oil
1 tsp vanilla extract
1/2 tsp poppy seeds

Process

Preheat your oven to 375 degrees. 

Mix together the dry ingredients. When they're mixed evenly, add in mashed bananas, the juice of 1 1/2 lemons (squeezed), 1 egg, 1/3 cup vegetable oil, 1 tsp vanilla extract, and 1/2 tsp poppy seeds. 

Scoop out evenly into 12 muffin liners and bake at 375 for 20 minutes. (Give or take a minute, test with a toothpick)


Optional Glaze

I used the juice of the remaining half of a lemon and slowly added powdered sugar to that juice to create a glaze. Matthew and I think they're phenomenal with a glaze, but they'd surely be more healthy without. I also topped them off with a few little poppy seeds!
