Red Onion & Cucumber Salad


Hey there, friends! With summer slowly coming to a close, I wanted to get in one more favorite summer recipe before I start the exciting fall transition. I find that I make this recipe almost every other week as it can be make quickly and with things I often have just left over from the week. This summer salad is perfect to bring on a little weekend picnic with your family, or a potluck with the whole neighborhood, or just to keep in your refrigerator as a quick snack. 

Recipe:
1/4 C rice wine vinegar 
1/4 C apple cider vinegar
1/2 C water
1/4 C granulated sugar
1 Tbsp dill weed
1/2 sliced red onion
2 thinly sliced cucumbers



Method:

This is so unbelievably easy! In a large bowl (I use a mixing bowl with a lid and leave it in there when I'm finished for storage) add the rice wine vinegar, apple cider vinegar, water and granulated sugar. Whisk until the sugar has dissolved. Add the dill weed, then slice the veggies and also add them. Done!

You can serve this salad immediately, but I think it tastes much better after having sat in the vinegars overnight in the refrigerator! 

Some weeks I'll also have tomatoes and/or red cabbage left over and those go very nicely in this salad as well. Also- I used to make this without the dill and it was still delicious! However a few weeks ago I had a recipe that included dill weed and I've since been testing it out in tons of recipes because I love it so much 😂

  1. I LOVE vinegar cucumber salad!!! I've made it twice this year and you are right it's best served after chilling overnight!!!
