Meatless Menu Week 4


Monday


It seems that there's always one recipe throughout the week that doesn't end up working for me...this was that recipe. Sometimes Matthew surprises me with a take out or restaurant meal and some times i learn the limits of my cooking abilities and Monday was the latter. These just did not work for me. I followed the recipe just as it's written but they never set. They were very squishy and almost runny. I went ahead and put them in the oven to see if the heat would harden them but it just baked them flat and they remained a gloppy mess. I'm so sad to share this news, and the recipe sounds delicious- so please try it for yourself! Toss me a few pointers if you figure it out 😉

Tuesday


Delicious! And on the same note- kind of just a breakfast skillet with beans. But so delicious! Also we had a team vote (I asked Matthew his preference) and instead of making the sauce, which sounded amazing, we made guacamole. And we had plenty of extra to use with some tortilla chips 😋

Wednesday


Oh goodness. Does anyone know where you can get egg roll wraps?? Anyone? Because I sure don't. I went to way too many grocery stores and the closest thing I found to them were wonton wraps. So the shape and size of our "egg rolls" are...unconventional. But this recipe was fantastic. I served these with rice and vegetables and it felt like we were having takeout! Love!

Thursday


If you try only one of these recipes, make it this one! Oh my goodness- so good! The sauce was made of veggies, (in our case) the pasta was made of veggies, and on top of that we added greens. Sounds so blah, honestly, but it is the best meal I've made in a long time! I won't lie, we added parmesan over the top to serve, so it was no longer vegan, but we'll be okay. Try this recipe!!

Friday



I had never had Bibimbap- and definitely never made it for that matter, so I wanted to follow the recipe exactly. I was super hesitant to include the cucumber and pickled radishes because as I was making it and smelling all the flavors it just didn't seem right, lol. But the end result was amazing! Also, I think it's really important to really get the tofu browned because of the flavor that that adds. This Bibimbap was a very close second for "favorite" just behind the pasta. For a few last notes: I did not use sesame seeds to top it simply because I forgot them (whoops), it was still yummy. I didn't prepare the radishes a whole day in advance like the recipe suggests. I think I started that around 2.5 hours beforehand and they got nice and fully saturated. I sliced the radishes very thin and I think that helped! 

I hope you love these recipes! I always have such a good time trying new things for dinner every evening and removing meat from my diet has allowed for me to try these unique recipes that I wouldn't have sought out otherwise. Next week I'm trying to keep things super low budget so I think all of the recipes will be very basic vegetarian meals that are quick to make!
