Thyme Buttermilk Biscuits


First of all, buttermilk biscuits are delicious. And perfect with like any and every dinner. But for those dinners that may be extra special whether it's a birthday or you're having a guest or it's Easter (!!!), elevating your homemade biscuits with just a little bit of thyme makes a huge impact. My grandma is an amazing biscuit maker and honestly I never thought I'd be able to compare myself to her in that way, but these make me feel almost as good!

My fam enjoyed these served with local honey and butter, but they'd be good with any jam or preserve, or even by themselves. They have amazing flavor and crisp. 

Ingredients:

2 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp sugar
1/2 tsp salt
1 cup chilled buttermilk
1 stick melted butter (wait until it's no longer piping hot to use)
1 Tbsp chopped thyme + a few sprigs to garnish

Method:

Preheat your oven to 450℉ and line a baking sheet with parchment paper.

Whisk together all dry ingredients including the chopped thyme. Then in a separate bowl mix together buttermilk and butter. With a rubber spatula combine wet and dry ingredients until just combined. 

Using a large-ish spoon (should scoop about 1/4 C.) scoop out biscuits and *plop* onto your baking sheet. If you're like me you'll have the urge to hand shape your biscuits so they're uniform...don't! If you overwork biscuit dough it bakes into a dense brick. Before you put them into the oven, lightly press sprigs of thyme into the tops. If you don't press them in hard enough they will pop right off after being baked, but don't press too hard.

Bake for 13-15 minutes, or until the outside is golden brown.
