Jalapeno Cheddar Bagels

 

I woke up one morning not long ago and immediately was craving bagels. So obviously I got up Panera's app and added a few bagels to the cart as well as our favorite spreads and a cup of coffee...the total with delivery was over $25...lol. I don't know about you but that was just too much for a piece of bread for breakfast! So I got online and looked up some bagel recipes but they all took over an hour and included ingredients that I didn't have. Literally I could not find a single recipe that I already had all of the ingredients for! So I made my own. 

These are very simple with only a few ingredients, and take around 30-35 minutes total. And they were delicious! They didn't even need a spread because the cheddar helped keep them moist and the spices added to that created so much flavor. 



Ingredients:

1 cup flour

1/2 tbsp baking powder

pinch or two of salt

1 cup sour cream or greek yogurt

1/3 cup shredded cheddar cheese

1/3 jalapeno- minced

1 whisked egg white

topping spices of your choice (I always use red pepper flakes, poppy seeds, "everything" seasoning, and onion powder)


Method:

It's so easy! Preheat oven to 350 degrees F. If you have a stand mixer, add in flour, baking powder, salt, sour cream or greek yogurt if that's what you're using, minced jalapeño, and cheddar cheese. Mix until it forms a dough ball. You can also toss it all into a large bowl and mix by hand at first, then begin kneading until it's dough. Also, just a note. I mix in the stand mixer until it gets sticky and forms a ball, then I transfer to the counter and knead with my hands and continue to add flour until it get less sticky and more dough-y. 


Place your dough ball on your lightly floured counter and slice with a large knife into fours. There are two ways to form these pieces into bagel shape: roll into a log and join the two far ends. You might need to wet the ends with water to get them to bind. That way is more difficult to me, so I just roll the pieces into a ball and pinch the middle out with my fingers. Works so much better in my opinion! But do what you're better at, obviously. 

Place your bagels on a prepared baking sheet (with parchment paper or use a non-stick pan) and brush your bagels with the whisked egg. Sprinkle over more cheddar cheese if you wish and your spices. PS- thinly sliced jalapeños would be amazing on top as well. Bake at 350 degrees F for 25-30 minutes, or until the top gets golden brown. The cheese will brown first, but watch for the actual bagel to brown!
