Banana Nut and Apple Muffins


 It's been three months since my last post! Which is admittedly not my longest hiatus. But these muffins were certainly worth a quick post, especially now that it seems everyone is truly accepting that it might actually be fall again! Here in Kansas the weather has decided (like overnight) that it'll cooperate with fall and we've even had a few actually chilly mornings! I love having a fall treat baking in the oven. Nothing sets the fall mood quite like it 😋 (I've also been really into my wax melt warmer and I always gets scents that smell liked baked goods so if I'm feeling too lazy to actually bake, I can fake it 'til I make it.) Anyway, didn't mean to get distracted! These muffins are perfect for fall and easy as just about anything to make. Baking recipes such as this one recommend mixing wet and dry ingredients separately so all ingredients are evenly dispersed, but you could toss it all in your stand mixer and mix until just incorporated if you needed to save time/not make additional dirty dishes. (Nobody tell Ina I said that.)

Ingredients:

2 ripe bananas, mashed

2 granny smith apples with skin removed and chopped into small chunks

1/3 cup melted butter

3/4 cup granulated sugar

2 tbsp brown sugar

2 tsp Saigon cinnamon (or regular, but Saigon tastes much better, I promise! Found at Target)

1 beaten egg

2 tsp vanilla exract

1 tbsp maple syrup 

1 tsp baking soda

pinch of salt

1 1/2 cups all purpose flour

1 cup chopped walnuts + a small handful or two reserved on the side

Method:

Preheat your oven to 350 degrees Fahrenheit and line a muffin tin with muffin liners. 

Whisk together the dry ingredients- white and brown sugar, cinnamon, baking soda, salt, flour, and 1 cup of chopped walnuts. 

In your stand mixer or a separate large bowl, combine the wet ingredients- 2 mashed bananas, chopped apples, melted butter, 1 beaten egg, vanilla extract, and maple syrup.

Slowly add the dry ingredients into your wet ingredients bowl and mix until just incorporated- do not over mix the batter. 

Fill your muffin tin until each liner is 3/4 full. Sprinkle the reserved walnuts over the top. Bake at 350 degrees Fahrenheit for 25 minutes or until a toothpick inserted into the middle comes out clean. 

If you're feeling fancy, sprinkling a little more brown sugar over the top or a little bit of maple syrup! Over-the-top muffins are never a bad idea!
